Lentils are an edible legume, high in fibre, and complex carbohydrates, low in fat and calories, and naturally gluten-free. They come in different colours such as: brown, green, red, yellow or black.
Serves: 4
Preparation: 15 minutes
Cooking: 30 minutes
Ingredients:
- 1 cup dry red lentils, rinsed well
- 1 cup white potatoes cut into cubes
- 1 medium onion finely chopped
- 3 cloves garlic, finely chopped
- 2 large carrots, finely chopped
- 1 tsp cumin seeds
- 1 tsp mustard seed
- ½ tsp coriander seed
- 5 cups filtered water
- 2 tbs extra virgin olive oil
- 1 tsp dry seasoning
- 1 tsp Himalayan salt
- ½ tsp ground black pepper
- 2 tbs chopped parsley to garnish
Directions:
Step 1
Heat the oil in a large pot over medium heat. Add cumin seeds, mustard seeds and coriander seeds and cook for one minute until fragrant.
Step 2
Add the onion, garlic and carrot to the pot and cook stirring often for 5 minutes, until the onion is translucent.
Step 3
Add lentils, potatoes and water. Bring to a boil, then reduce the heat and simmer, covered, for 30 minutes until the lentils are tender. Add salt, pepper and dry seasoning and mix well to combine.
Step 4
Allow to cool slightly before blending the soup with a stick blender.
Step 5
Divide the soup into serving bowls and garnish with parsley.
*Serve with slices of Turkish bread.
