Homemade Healthy Vegetable Broth Cubes

As for cooking, vegetable broth cubes are a good option to get as many vitamins and minerals as possible and add some flavour to dishes. But the problem is that with vegetable broth cubes we also get artificial flavours and colours, added fat, sugar, sodium, preservatives, flavour enhancers and other chemicals which can be found in processed foods. Today we bring you a recipe for healthy homemade vegetable broth cubes, without chemicals tailored to your taste. It’s easy to make, it’s fun and you’ll be proud of it.

Homemade Healthy Vegetable Cubes

  • 4 large carrots
  • 1 leek, chopped
  • 4 medium parsnips
  • 5 celery sticks with leaves
  • 4 cloves garlic
  • 2 medium onions
  • Handful of parsley leaves
  • 1 tbs turmeric
  • 1 capsicum
  • 100 g Himalayan salt
  • 3 tbs extra virgin olive oil

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse, dry and chop.

Step 2

Place the oil in a large pan over medium heat. Add the vegetables and stir to combine. Cook, stirring occasionally, until the vegetables release their juices, then add salt and mix well to combine. Cover and cook for another 10 minutes, or until the vegetables are soft.

 Step 3

Remove the pot from the heat and set aside for 5 minutes to cool.

Step 4

Transfer the vegetables to a medium-sized bowl and process with a hand blender until smooth.

Step 5

Line a medium-sized tray with baking paper. Transfer the mixture to a tray and smooth it with a spatula to obtain a uniform thickness. Allow to cool, then cover the tray with cling foil and place in the freezer overnight.

Step 6

Cut the broth into cubes of the same size. Wrap each cube separately in aluminium foil, place in a zip bag and keep in the freezer.

  • Dissolve the cube in a cup of boiled water, or add to the dish directly;
  • Dissolve the cube in a cup of warm filtered water and make a healthy drink;
  • Make your selection of vegetables.

A variety of healthy colourful vegetables, rich in minerals, vitamins, antioxidants and plant compounds provide your body with the nutrients it needs to maintain good health.
