This year, celebrate Christmas in style with an amazing Gingerbread Cake. This cake, rich with sultanas soaked in rum, will make an incredible Christmas dessert that will impress everyone. Enjoy!

Ingredients
- 250g + 3tbsp, unsalted butter, softened
- 400g plain flour
- 4 large free-range eggs
- 120 ml milk
- 120 ml water
- 150g raw sugar
- 150g molasses
- 100 g sultanas
- 30 ml rum
- 250g honey
- 2 tsp baking powder
- 4 tsp ground ginger
- 3 tsp finely grated ginger
- 3 tsp ground cinnamon
- 150 g dark cooking chocolate
Directions
Step 1
In a medium saucepan put the butter, raw sugar, molasses, honey, and water and place it over low heat, swirling until the butter has melted. Pour into a medium mixing bowl and set aside to cool off.

Step 2
Soak sultanas in the rum for 20 minutes. When the mixture cools off, whisk in eggs, until all incorporated. Add milk and whisk to combine. Then add flour, baking powder, ground ginger, cinnamon, and sultanas and whisk until you get a thick batter, then stir in fresh ginger.

Step 3
Preheat the oven to 180°C. Grease a 25cm round pan with softened butter. Pour batter into the pan and make it even. Bake the cake for 45–50 minutes or until a skewer inserted in the cake comes out clean. Set the cake aside to cool for 20 minutes, then turn it out onto a wire rack and leave it to cool off completely.

Step 4
In a small saucepan, put the chocolate and place it over low heat, swirling until the chocolate has melted. Pour the melted chocolate over the cake and leave it to cool off. Once it cools off, the cake is ready to be served.

Tips
- Serve with coffee or tea.
- You can decorate the cake with melted chocolate, icing sugar, sprinkles, almond flakes, or dried fruit.
- The cake should be stored in a cool, dry place for up to 10 days. However, if you want to keep it longer, you can store it in the fridge.
- Wrap the plastic wrap tightly around the cake to prevent it from drying out.
