Rigatoni with Spinach and Feta Cheese

Pasta is a tasty and quick dish that most people enjoy. There are many pasta dishes that we love, but there is always one we enjoy the most. Here is a simple and delicious recipe for rigatoni with spinach and feta cheese. Try it and see if it becomes your favourite pasta dish.

Rigatoni with Spinach and Feta Cheese

Serves: 4

Preparation: 10 minutes

Cooking: 20 minutes

Ingredients:

  • 500 g Rigatoni
  • 60 ml Extra virgin olive oil
  • 4 large garlic cloves, thinly sliced
  • 1 large carrot, sliced
  • 60 g walnuts, chopped
  • 200 g baby spinach
  • 200 g cherry tomatoes, halved
  • 100 g feta cheese, crumbed
  • 1 lemon, juiced
  • 1 tsp Himalayan salt
  • ½ tsp ground black pepper
  • 1 tsp homemade dry seasoning
  • Parmesan, to serve
  • Parsley leaf, finely chopped, to serve

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Cook pasta in a large pot of boiling salted water, according to package directions. Drain and set aside.

Meanwhile, heat the oil in a large frying pan over medium heat. Add the walnuts and garlic and cook, stirring, for 1-2 minutes, or until light golden. Add the spinach and cook for 1-2 minutes, or until the spinach is just wilted.

Add the pasta, tomatoes, feta and lemon juice to the spinach mixture and stir until heated through. Season and mix well to combine.

Divide the pasta into serving bowls, sprinkle with parmesan and parsley and serve immediately.

 Tips:

  • Replace Feta with Cottage cheese
  • Replace walnuts with almond flakes
  • Replace Rigatoni with pasta of your choice
  • Replace the spinach with roughly chopped beetroot leaves
  • Store leftover pasta in an air-tight container in the refrigerator for up to 5 days
  • Add stuffed olives for a Mediterranean touch
