Salads are a simple and healthy option for a light meal. They are ideal to serve with a main or an easy lunch option. There are a number of ingredients to use and many different dressings to make it more delicious. Today, we bring you a recipe for a healthy and colourful chilli prawn cocktail salad with nectarines to try. Enjoy!
Chilli Prawn Cocktail Salad with Nectarines
Serves: 6
Preparation: 15 minutes + Soaking time
Ingredients:
- 1 kg cooked whole tiger prawns, peeled, leaving tails intact
- 2 medium-sized cucumbers
- 2 avocados, stoned, peeled, thinly sliced
- 250 g rocket salad
- 250 g baby spinach
- 3 medium-sized nectarines, thinly sliced
- 3 cloves garlic, finely chopped
- ½ cup coriander leaves, finely chopped
- ½ cup dill leaves, finely chopped
- 100 g almond flakes, toasted
- 1 red chilli, thinly sliced
- 1 red chilli, finely chopped
- 2 tbs Extra virgin olive oil
- 2 tbs freshly squeezed lemon juice
- 150 g Greek yoghurt, natural style
- 1 tbs Organic apple cider vinegar
- 1 tsp Himalayan salt
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Toast the almond flakes in a medium pan over medium heat until they are lightly browned and fragrant. Remove from heat and set aside to cool.

Step 3
Place yoghurt, olive oil, lemon juice, finely chopped red chilli, garlic, coriander, dill, apple cider vinegar, and Himalayan salt in a small bowl and stir well to combine.

Step 4
Arrange prawns, nectarines, avocado, rocket, cucumbers and baby spinach on a serving platter. Drizzle with a little dressing. Sprinkle with almond flakes and sliced chilli. Divide the salad between serving plates and top with the remaining dressing.

Serving suggestions:
- Serve with grilled Turkish bread slices

Tips:
- Replace Greek yoghurt with yoghurt of your choice, or mayonnaise
- Replace nectarines with apples or the fruit of your choice
- Replace almonds with walnuts or cashews
- Store the leftover in an airtight container in the refrigerator for up to 5 days
