Easy Cheese Scones

Makes: 16

Preparation: 20 minutes

Cooking: 20 minutes

Ingredients:

  • 450 g self-rising flour
  • 80 g butter, cold, chopped
  • 150 g cheddar cheese, grated
  • 50 g parmesan, ground
  • 330 ml cold milk, plus extra to brush
  • 1 tsp baking powder
  • ½ tsp Himalayan salt

Directions:

Step 1

Preheat the oven to 200°C. Line a baking tray with baking paper.

Step 2

Sift the flour, salt and baking powder into a large mixing bowl. Add the butter and rub it into the flour with your hands until the mixture resembles fine breadcrumbs. Add 2/3 of the cheddar and half of the parmesan cheese and stir to combine. Make a well in the middle and pour in the milk.  Stir the mixture with a spatula until it just sticks together. The mixture should be slightly sticky.

Turn the dough onto a clean, lightly floured surface and form it together into a rough ball. Do not overdo the dough. Gently roll out the dough with your fingers, until it is 2.5 cm thick. Use a round cutter with a diameter of 5 cm dipped in flour to cut scones from the dough. Reshape the excess dough and cut out more scones.

Arrange the scones, almost touching, on the prepared baking tray. Brush them lightly with milk and sprinkle with the remaining cheddar and parmesan cheese.

Bake the scones for 15-20 minutes or until they are lightly browned and cooked through. Remove from the oven and transfer to a wire rack to cool.

Serving suggestions:

  • Serve with whipped cream and jam of your choice
  • Serve with sour cream and fresh berries
