Ingredients:
- 500 g pack of spaghetti
- 750 g seafood mix
- 500 g cherry tomatoes, halved
- 2 medium zucchinis, thinly sliced
- 1 medium onion, finely chopped
- 4 cloves garlic, finely chopped
- ½ cup toasted walnuts, roughly chopped
- ½ cup parsley leaves, chopped
- ½ cup baby rocket
- 2 tbs extra virgin olive oil
- 1 medium lemon juice
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp ground black pepper
- ½ tsp chilli flakes
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Cook the pasta in a large saucepan of boiling salted water, stirring occasionally, until al dente. Drain well and cover to keep warm.

Step 3
Meanwhile, heat the oil in a large deep frying pan over medium heat. Cook the onion, stirring, for 2 minutes, or until translucent. Reduce the heat to low, add the tomato, zucchini, and garlic and mix well to combine. Cook, stirring occasionally, for 10 minutes, or until the tomatoes begin to break down. Add the seafood mixture and cook, stirring occasionally, for 5 minutes, or until the seafood is cooked through.

Step 4
Add the pasta to the seafood mixture. Add the spices, lemon juice, parsley and rocket and toss until all is combined and heated through. Sprinkle with walnuts.

Serving suggestions:

Tips:
- Add chopped capsicum to enhance the taste
