Easy and Healthy Mushroom Tart

Mushrooms are a good substitute for meat, although they are not rich in protein. However, they exceed meat in many nutrients: they are a rich source of vitamins and minerals like zinc, selenium, and vitamins B1, B2, B5, B6 and B12. Healthy Mushroom Tart

Serves: 8

Preparation: 20 minutes

Cooking: 60 minutes

Ingredients:

  • 500 g champignons, thickly sliced
  • 4 large onions, thickly sliced
  • 1 red pepper, thinly sliced
  • 2 garlic cloves, crushed
  • 5 tbs extra virgin olive oil
  • 40 g unsalted butter
  • 250 g cottage cheese
  • 1 large free-range egg
  • 100 g cheddar cheese, grated
  • 50 g parmesan cheese, finely grated
  • ½ cup fresh parsley leaves, finely chopped
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt
  • ½ tsp ground black pepper
  • ½ tsp turmeric powder

Pastry:

  • 250 g plain flour
  • ½ tsp Himalayan salt
  • 150 g chilled unsalted butter
  • 60 ml iced water

Directions:

Step 1

Soak the vegetables in baking soda solution for 15 minutes, then rinse and dry.

Step 2

To make the pastry, put the flour and salt in a food processor and pulse to combine. Add the butter and mix until the butter is cut into pea-sized pieces. Then, add the ice water 1 tablespoon at a time and mix until the mixture just comes together. Add more water if necessary. Shape the dough into a ball and flatten it into a disc. Cover with plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 180°C.

Step 4

Turn the dough onto a lightly floured surface and roll it into a 30 cm disc.

Step 5

Line a 22 cm (base measurement) round tart baking dish with a removable base with the pastry, and cut off the excess dough. Place the dish in the freezer for 30 minutes.

Step 6

Meanwhile, heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, until translucent and fragrant. Transfer to a plate and set aside.

Melt the butter in the same pan over medium heat. Add the mushrooms, red pepper and garlic and cook for 10-15 minutes. Add the onion mixture and spices and cook for another 5 minutes. Remove from heat and set aside to cool.

Step 8

Place cottage cheese, cheddar, parmesan and parsley in a medium bowl and whisk until combined. Season to taste.

Cover the pastry with baking paper and fill with pastry weights or rice. Bake for 25 minutes, then remove the weights or rice and the baking paper.

Step 10

Spread the cottage cheese mixture evenly over the pastry and top with the mushroom mixture. Bake for 35 minutes, or until the filling is set and the mushrooms are golden brown. Set aside to cool slightly.

Transfer the tart to a serving plate and cut into pieces to serve.

Serving suggestions:

  • Serve with seasonal salad or pickles
  • Serve with sour cream

Tips:

  • Add halved cherry tomatoes to enhance the taste
  • Replace cottage cheese with ricotta cheese
  • Replace the parsley leaf with rosemary leaf or fresh mint leaves
  • Replace onions with shallots
  • Cook the mushroom mixture in advance and keep it in the refrigerator until you need it
  • Prepare the pastry the day before and keep it in the refrigerator
  • Store leftover mushroom tart in an airtight container in the refrigerator for up to 5 days
