Healthy Spiced Cauliflower Salad
Serves: 4

Ingredients:
- 1 medium head of cauliflower, cut into florets
- 500 g potatoes, cut into 1.5 cm dice
- 200 g peas
- 2 medium carrots, thickly sliced
- 3 medium tomatoes, chopped
- 3 cloves garlic, chopped
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- 1 tsp curry powder
- 1 tsp turmeric powder
- 1 tsp ginger, grated
- ½ tsp black pepper, freshly ground
- 1 tsp chilli flakes
- 4 tbs extra virgin olive oil
Minty yoghurt:
- ½ cup Greek yoghurt, traditional style
- 3 cloves garlic, chopped
- 2 springs fresh mint, finely chopped, plus extra to serve
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat oven to 180 °C and line a large oven tray with baking paper.

Step 3
Heat the olive oil in a medium frying pan over medium heat. Toast the tomatoes and spices for 2-3 minutes or until fragrant. Stir in the garlic and ginger.

Step 4
Place the cauliflower, carrots, potatoes and peas in a large bowl and toss in the tomato mixture, coating well.

Step 5
Arrange the vegetables onto a lined baking tray. Bake for 25 minutes, or until vegetables are tender.
Step 6
For minty yoghurt, combine all ingredients in a small bowl. Season to taste.

Step 7
Place the vegetables in a large serving bowl. Spoon the minty yoghurt over the mixture and stir well to combine.
Serving Suggestions:
- Serve with grilled haloumi slices
- Serve as a side dish
- Serve with baked salmon
- Serve with cooked prawns

Tips:
- Sprinkle with fresh parsley leaves to enhance taste
- Store leftover salad in an airtight container in the refrigerator for up to 3 days
