Chickpea Fritters with Avocado Salad

Chickpea Fritters with Avocado Salad

Serves: 4

Ingredients:

Fritters:

  • 2 tins chickpeas (400 g each)
  • 3 tbs fresh parsley leaf, chopped
  • 40 g bread crumbs
  • 3 cloves garlic, chopped
  • 1 small onion, finely chopped
  • 1 tsp fresh rosemary leaf, finely chopped
  • 1 free-range egg
  • 2 tsp homemade dry seasoning
  • ½ tsp black pepper
  • ½ tsp Himalayan salt
  • 100 g walnuts
  • 10 g butter
  • 4 tbs extra virgin olive oil

Salad:

  • 1 large avocado, sliced
  • 1 small tin corn kernels, rinsed and drained
  • 250 g cherry tomatoes, halved
  • 1 medium onion, chopped
  • 3 cloves garlic, finely chopped
  • 150 g rocket leaves
  • 1 yellow capsicum, chopped
  • 2 tbs extra virgin olive oil
  • 3 tbs Greek yogurt, traditional style
  • ½ tsp Himalayan salt
  • ½ tsp black pepper, freshly ground

Preparation:

Fritters:

Step 1

Rinse the chickpeas, drain, and set aside to dry.

Step 2

Soak the vegetables in a baking soda solution, rinse, and dry.

Step 3

Place the chickpeas, parsley, breadcrumbs, garlic, onion, and rosemary in a food processor and process until smooth. Transfer to a bowl, add the egg and spices, and mix well to combine.

Step 4

Roughly chop the walnuts and fry in butter for 5 minutes or until golden brown. Add the walnuts to the chickpea mixture and stir to combine.

Step 5

Divide the mixture and form 4 fritters. Place the fritters on a tray and refrigerate them for an hour to chill.

Step 6

Heat the oil in a medium frying pan over medium heat. Add the fritters and cook for 3 minutes on each side or until golden brown. Remove from the pan and place them on a paper towel to absorb the oil.

Salad:

Step 7

Soak the vegetables in a baking soda solution, rinse, and dry.

Step 8

Rinse the corn, drain it, and place in a large bowl. Add all the ingredients and mix to combine. In a small bowl, place the olive oil, yogurt, and spices and mix well to combine. Pour the dressing over the salad and stir to combine.

Step 9

Divide the salad among serving plates. Top the fritters and serve.

Tips:

  • Add dill to the fritter mixture for extra flavour.
