Healthy Curried Potato Salad with Toasted Almond Flakes

Salads are a simple and healthy option for a light meal. They are ideal to serve with a main course or as an easy lunch option. There are many ingredients to use and many different dressings that will make it more delicious. Today, we bring you a recipe for a Healthy curried potato salad with toasted almond flakes to try and enjoy.

Healthy Curried Potato Salad with Toasted Almond Flakes

Serves: 6

Preparation: 15 minutes

Cooking: 15 minutes

Ingredients:

  • 1 kg baby potatoes, quartered
  • 150 g frozen peas
  • 200 g Greek yoghurt, natural style
  • 1 cucumber, thinly sliced
  • 200 g cherry tomatoes, halved
  • 2 spring onions, thinly sliced
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 3 tbsp curry powder
  • 2 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ cup almond flakes, toasted
  • ¼ cup dill, finely chopped

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Place the potatoes in a large saucepan of filtered water. Add salt and bring to a boil over medium heat. Cook until tender. Remove from heat, drain, and set aside to cool.

Step 3

Meanwhile, place the peas in a small saucepan of boiling water and cook for 2 minutes. Drain and set aside to cool completely.

Step 4

For the dressing, place yogurt, olive oil, dry spices, curry powder, and lemon juice in a bowl and mix well to combine.

Place the potatoes and peas in a large bowl. Add the spring onion, cucumbers, and cherry tomatoes and stir to combine. Add half of the dressing and toss to combine.

Transfer the salad to a serving bowl and drizzle with the remaining dressing. Sprinkle with dill and almond flakes to serve.
