Colourful Vegan, Gluten-Free Beet Soup

  • 6 small-medium beets, peeled and quartered
  • 2 cups chickpeas, rinsed and dried
  • 2 medium onions, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 tbs minced ginger
  • 2 tbs curry paste
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt
  • 1 tsp ground paprika
  • ½ tsp turmeric
  • ½ tsp ground cinnamon
  • ½ tsp ground cumin
  • ½ tsp cayenne pepper
  • 2+2 tbs extra virgin olive oil
  • 5 cups filtered water
  • 1 cup fresh basil or parsley leaf, finely chopped
  • 1 tbs soup cream


Step 1

To prepare the chickpeas: heat 2 tablespoons of olive oil in a medium saucepan over medium heat, add ½ of one finely chopped onion to a pan and cook until translucent. Add chickpeas, ½ a teaspoon of cumin and ½ a teaspoon of cayenne pepper and cook for 10 minutes. Remove from heat and set aside to cool.

Step 2

Heat 2 tablespoons of olive oil in a large pot over medium heat. Add remaining onions, garlic and ginger and cook for 2 minutes, stirring frequently.

Step 3

Add the beets, salt, pepper, dry seasoning, curry paste, cinnamon, turmeric and paprika, and stir to combine. Add water and bring to a boil. Then, reduce the heat to low, cover and simmer for 15 minutes, or until the beets are tender.

Step 4

Blend the soup with a stick blender until smooth. Taste and adjust the spices if needed, adding more salt or spices to taste.

Step 5

Divide the soup into serving bowls. Add a generous amount of chickpeas and sprinkle with a basil or parsley leaf and add soup cream.

*All leftovers can be stored in the refrigerator in an air tight container for up to 4 days, or in the freezer for up to 1 month.
