Smashed Potatoes with Garlic Butter Dip

Smashed Potatoes with Garlic Butter Dip

Serves: 6

Preparation: 10 minutes

Cooking: 75 minutes

Ingredients:

  • 1 kg baby potatoes
  • 3 tsp extra virgin olive oil
  • 50 g butter
  • 5 garlic cloves, thinly sliced
  • 5 spring onions, thinly sliced
  • 3 tbs parmesan cheese
  • ½ tsp ground black pepper
  • 1 tsp Himalayan salt
  • 1 tsp Homemade dry seasoning
  • 1 tsp ground paprika

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Preheat oven to 200°C. Line a large baking tray with baking paper. Place the potatoes on the tray, drizzle with oil and season.

Step 3

Bake the potatoes, turning occasionally, for one hour, or until tender.

Step 4

Remove the tray from the oven and increase the temperature to 220°C. Carefully crush each potato with a large spoon, drizzle with the remaining olive oil, Parmesan cheese and season. Bake for a further 15 minutes, or until crispy.

Step 5

Meanwhile, melt the butter in a small pan over medium heat. Add the garlic and spring onions and cook, stirring occasionally, for 3 minutes, or until cooked.

Step 6

Arrange half of the potatoes on a serving platter and drizzle with a quarter of the butter mixture. Repeat the layers with the remaining potatoes and one-quarter of the butter mixture.

Step 7

Serve with the remaining butter mixture for dipping.

Tips:

  • Mix the spices in a small bowl for easier seasoning
  • Replace the butter with extra virgin coconut oil
