Potatoes are a type of vegetable that most people love and can be prepared in many ways. Some are more popular than others, but all are very tasty and usually easy to prepare. Today we bring you a potato dish with tomato fry that meets all the criteria and satisfies the taste buds.
Serves: 4
Preparation: 30 minutes + soaking time
Cooking: 30 minutes
Ingredients:
- 1 Kg small potatoes, halved
- 1 Onion, chopped
- 2 Carrots, chopped
- 1 Parsnip, chopped
- 1 Red capsicum, chopped
- 4 Cloves garlic, chopped
- 4 Medium tomatoes
- 1 Celery stick with leaves
- 50+50 ml Extra virgin olive oil
- 1+1 tsp Himalayan salt
- 1+1 teaspoon Homemade dry seasoning
- ½ tsp black pepper, ground
- 1.5 l Filtered water
- Parsley leaf
- 100 g Cheddar cheese, finely grated
- ½ Cup Parmesan cheese, finely grated
Directions:
Step 1
Peel and soak the vegetables in baking soda solution, for 15 minutes, then rinse and dry.
Step 2
Place the potatoes in a saucepan, pour filtered water over them and cook until soft. Remove from heat, drain and set aside.
Step 3
Chop the onion and put it in the frying pan. Add olive oil and fry on medium heat until translucent and fragrant.
Step 4
Chop the capsicum and celery and add to the onion. Continue to cook, stirring occasionally, for 15 minutes.
Step 5
Chop the garlic and put it in another pan with olive oil. Fry it over medium heat stirring, so that it does not burn.
Step 6
Finely grate the carrots and parsnip and add to the garlic. Continue to cook for 10 minutes, stirring occasionally. Add potatoes and cook for another 5 minutes. Add the spices and mix well to combine.
Step 7
Cut the tomatoes in half and put them in a pan with onions and capsicum and cook over medium heat for another 10 minutes, until the tomatoes soften. Add the spices and mix well to combine.
Step 8
Finely chop the parsley and put it in a small bowl. Finely grate Cheddar and Parmesan cheese and set aside separately.
Step 9
Sprinkle the Cheddar cheese over the potatoes, cover with a lid and cook for another 5 minutes, until the cheese slightly melts.
Step 10
Arrange potatoes on serving plates, add tomato fry and sprinkle with parsley and Parmesan cheese.
Serve with slices of Turkish bread.
Tips:
- It can be served as a main dish or a side dish;
- Replace the Turkish with bread of your choice;
- Replace Cheddar with Mozzarella cheese.
