Curry powder is a spice mixture of turmeric, cumin, chillies and ginger, but can also contain coriander, fenugreek, mustard, pepper, cinnamon, cloves, cardamom and nutmeg. It is a very popular spice mixture and very healthy. So, if you are looking for a vegetarian curry recipe, you have come to the right place. This vegetarian chickpea and sweet potato curry will become your favourite.
Vegetarian Chickpea & Sweet Potato Curry
Serves: 4
Preparation: 15 minutes
Cooking: 45 minutes
Ingredients:
- 1 kg sweet potato, peeled and chopped
- 800 g can diced tomatoes
- 400 g can chickpeas, rinsed and drained
- 300 g long-grain white rice
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 tbs extra virgin olive oil
- 2 tbs curry powder
- 250 g Greek-style yoghurt
- 1 tsp Himalayan salt
- 1 tsp Homemade dry seasoning
- ½ tsp ground black pepper
- ½ tsp chilli flakes
- 150 ml filtered water
- ¼ cup parsley leaf, finely chopped
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 5 minutes or until translucent. Add the garlic and curry powder and cook, stirring, for 1 minute until well combined and fragrant.

Step 3
Add the chickpeas, sweet potato, tomato and water to the onion mixture and bring to a boil. Reduce the heat and cook covered, stirring occasionally, for 15 minutes, until the sweet potato is soft. Season with salt, dry seasoning, pepper and chilli flakes and mix well to dissolve.

Step 4
Meanwhile, cook the rice in a rice cooker.

Step 5
Place the yoghurt in a small serving bowl. Divide the rice into serving bowls and pour over the curry mixture. Sprinkle with parsley and serve with yoghurt.

Tips:
- Replace Greek yoghurt with natural yoghurt of your choice
- Store leftover curry in an airtight container in the refrigerator for up to 5 days
