Potatoes are probably everybody’s favourite vegetable. There are many different ways to prepare potatoes, and they are all delicious. They can be served as a snack with various sauces, as an entrée or a side dish. Today, we bring you the recipe for crispy golden roasted potatoes that will become your favourite. Enjoy!

Crispy Golden Roasted Potatoes
Serves: 8
Preparation: 10 minutes
Cooking: 60 minutes
Ingredients:
- 1,5 kg red potatoes, peeled, cut into quarters lengthwise
- 50 ml extra virgin olive oil
- 50 g butter, chopped
- 2 tsp dry rosemary leaves
- 5 garlic cloves, peeled, finely sliced
- ½ cup fresh parsley leaves, finely chopped
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
- 1 tsp chilli flakes
- 1 tsp paprika, ground
Directions:
Step 1
Peel the potatoes and garlic and soak them in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat the oven to 200°C. Place a large baking tray on the bottom rack of the oven while it is preheating.
Step 3
Meanwhile, cut the potatoes lengthwise into quarters and place them in a large pot of salted water and bring to a boil over medium heat. Reduce the heat and cook for 6 minutes, or until the potatoes are soft, but not breaking apart. Drain the potatoes in a colander and let the steam to evaporate for 5 minutes.

Step 4
In a large bowl, toss the potatoes with oil and seasoning and transfer them to the preheated baking tray, spreading the potatoes in an even layer. Bake the potatoes, without turning, for 20 minutes, then turn them and continue baking for another 20 minutes, turning occasionally as needed. Sprinkle the butter and garlic over the potatoes and shake the pan to mix them with the potatoes. Roast for another 10 minutes.

Step 5
Remove the potatoes from the oven and transfer them to a serving platter. Sprinkle with parsley and serve.

- Serve with a seasonal salad as a vegetarian dish
- Serve with ketchup as an entrée
- Serve as a side dish with meat or fish
Tips:
- Add a few carrots, cut in half lengthwise, and roast with potatoes
- Store leftover potatoes in an airtight container, or on a plate covered with glad wrap, at room temperature for up to 24 hours
