Easy Tuscan Pasta Salad

Serves: 4

Preparation: 15 minutes

Cooking: 10 minutes

Ingredients

  • 500 g penne pasta, cooked and drained
  • 200 g black olives, canned
  • 250 g spinach, finely chopped
  • 200 g sun-dried tomatoes in oil, drained
  • 1 medium red bell pepper, diced
  • 100 g parmesan cheese, grated

Dressing

  •  150 ml olive oil
  • 3 tablespoons lemon juice
  • 3 tablespoons water
  • 1 teaspoon Italian herbs
  • ½ teaspoon oregano
  • 2 cloves garlic, finely chopped
  • 1 teaspoon raw brown sugar
  • 1 teaspoon Himalayan salt
  • black pepper to taste

Directions

Step 1

Fill a large saucepan with water, put the lid on and bring to the boil. Add 1 teaspoon of Himalayan salt. Once the water is boiling, stir in the pasta. Cook the pasta according to the packet instructions. Once cooked, drain it in a colander. Leave pasta to cool off completely at room temperature.

In a medium bowl, combine black olives, spinach, sun-dried tomatoes, and bell pepper. Toss until combined.

Add the pasta to the mixture.

Step 4

To make the dressing: In a small bowl, whisk the olive oil, lemon juice, water, Italian herbs, oregano, garlic, brown sugar, Himalayan salt, and pepper.

Step 5

Drizzle the dressing over the pasta salad and serve.
