Roasted Pepper Dip

Dips are a popular snack option, can be served hot or cold, with crackers or vegetables, but can also be used as a base for a delicious curry sauce, sandwich filling or pasta sauce. Today we bring you a recipe for a simple and delicious roasted pepper dip. Easy to prepare – easy to enjoy.

Roasted Pepper Dip

Serves: 4

Preparation: 15 minutes

Cooking: 30 minutes

Ingredients:

  • 3 large red peppers, roasted
  • 3 large potatoes, diced, cooked
  • 3 cloves garlic, crushed
  • 4 tbs extra virgin olive oil
  • 1 tsp red paprika, ground
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt
  • ½ tsp black pepper, freshly ground
  • ½ tsp cayenne pepper, ground
  • Parsley leaf, finely chopped, for serving

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Place the red peppers on a baking sheet and roast in the preheated oven for 30 minutes, or until they soften. Remove from the oven and set aside to cool.

Meanwhile, cut the potatoes into cubes and cook them in a pot of boiling water for 20 minutes, or until they are soft. Remove from heat and drain, reserving liquid.

Peel the roasted peppers, wash them and dry with a paper towel.

Step 5

Put potatoes, peppers, garlic and the spices in a blender, add olive oil and a little reserved liquid and blend until the mixture becomes smooth and creamy. Add more liquid if necessary. Transfer the mixture to a serving bowl and garnish with chopped parsley leaves.

Serving suggestions:

  • Serve with carrot and celery sticks, potato chips, kale chips, cauliflower crackers, popcorn, mixed nuts
  • Serve with grilled Turkish bread slices
  • Serve with grilled haloumi slices
  • Serve with freshly cooked pasta

Tips:

  • Add mint leaves to improve the taste
