Ratatouille is a delicious French vegetable stew with rich Mediterranean flavours. It is made of eggplant, tomatoes, and zucchini in a tomato sauce with brown onion, carrot and garlic. Ingredients
- 1 medium eggplant, thinly sliced
- 1 medium zucchini, thinly sliced
- 3 tomatoes, thinly sliced
- 8 tbsp extra virgin olive oil
- 1 brown onion, chopped
- 4 garlic cloves, finely chopped
- 1 can of diced tomatoes, 450 g
- 1 carrot, grated
- ½ tsp Himalayan salt
- ½ tsp Homemade Dry Seasoning
- ½ tsp black pepper
Method
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat a fan-forced oven to 180C.
Step 3
In a large pan, heat 3 tablespoons of olive oil over medium-high heat. Add carrot, brown onion, and garlic and cook for about 5 minutes. Then, add canned diced tomatoes, and season with salt, pepper and homemade dry seasonings. Simmer for 10 minutes. Once the sauce is done, pour it into a baking dish.

Step 4
Arrange the sliced eggplant, tomato and zucchini in a circular pattern, standing upright in the dish over the sauce. Brush with the remaining olive oil.

Step 5
Cover with aluminium foil and bake for 45 minutes, then uncover and bake until the vegetables are tender. Serve it immediately after removing it from the oven to have the best experience.
