Chicken Ravioli With Pumpkin

Chicken Ravioli with Pumpkin 

Serves: 4

Preparation: 10 minutes

Cooking: 20 minutes

Ingredients:

  • 500 g chicken ravioli
  • 500 g butternut pumpkin, peeled, seeded
  • 1 leek, pale section only, thinly sliced
  • 2 large carrots, cut into 2 cm slices
  • ½ cup sage leaves
  • ½ cup parmesan, grated
  • 2 tbs extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper, freshly ground

Directions:

Step 1

Preheat the oven to 200°C.  Line a baking tray with baking paper.

Place the pumpkin and carrots on the baking tray. Sprinkle with the sage leaves. Spray with olive oil and season with dry seasoning, salt and pepper. Bake, turning occasionally, for 20 – 25 minutes, or until the vegetables are soft.

Bring a large pot of salted filtered water to a boil. Add the ravioli and cook for 10 minutes or until al dente. Drain, reserving half a cup of cooking liquid.

Meanwhile, heat the oil in a large frying pan over medium heat. Add the leek and cook, stirring occasionally for 5 minutes, or until the leek is soft. Add the pasta to the leek and stir to combine. If necessary, add a little cooking liquid to coat the pasta well. Remove from heat.

Step 5

Transfer the pasta to a serving bowl. Arrange the pumpkin and carrot on top. Sprinkle with Parmesan cheese. Serve immediately.
