Potato Stew With Dumplings

Ingredients:
- 1 kg potatoes, cut into quarters
- 1 small red capsicum, chopped
- 1 cup tomato puree
- 1 large onion, chopped
- 1 celery stick with leaves, chopped
- 1 large carrot, chopped
- 3 tbsp extra virgin olive oil
- 1 free-range egg
- 5-6 tbs plain flour
- 2 tsp paprika
- 1+ ½ tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
- ½ cup parsley leaf, finely chopped
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Coarsely chop the onion, capsicum, carrot and celery and add to a food processor. Process the vegetables until they are cut into small pieces.

Step 3
Heat the oil in a large pot over medium heat. Add the onion mixture and cook, stirring, for 5 minutes. Add the paprika and mix to combine. Then, add the potatoes and fill the pot with filtered water to completely submerge the potatoes. Bring to a boil and add spices and parsley.

Step 4
In a plate, beat the egg with ½ teaspoon of salt. Gradually add the flour while constantly stirring so that no lumps form. Continue adding flour until you have a thick, but soft consistency.

Step 5
Take the flour mixture with a teaspoon to form a dumpling and add it to a boiling potato stew. Repeat until the entire mixture is transferred to the stew. Cover the pot and cook for 30 minutes, or until the dumplings and potatoes are cooked. Leave aside for 10 minutes to cool.
