Baked Beans With Pickles

Baked Beans with Pickles

Serves: 6

Preparation: 15 minutes

Cooking: 45 minutes

Ingredients:

  • 4 x 400 g tins of mixed beans
  • 1 large onion, chopped
  • 1 large carrot, grated
  • 1 red capsicum, chopped
  • 2 cloves garlic, finely chopped
  • 1 celery stick with leaves, chopped
  • Parsley leaf, chopped
  • 4 tbsp extra virgin olive oil
  • 150 ml tomato purée
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper, freshly ground

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Heat the olive oil in a medium-sized pan over medium heat. Add the onion and cook for 5 minutes, or until the onion is translucent. Add carrot, celery, capsicum and garlic and cook for another 5 minutes.

Step 3

Preheat the oven to 200°C.  

Step 4

Drain the beans and put them in a colander. Rinse under running water until the drained water becomes clear. Add the beans to the onion mixture and stir well to combine. Then, add tomato purée and parsley, cover the pan and cook for 10 minutes. Add the spices and mix well to combine.

Step 5

Pour the beans into a glass baking dish and spread evenly. Place the baking dish in the oven and bake for 15 minutes, or until the beans are golden brown.

Step 6

Remove the baking dish from the oven and set aside for 5 minutes. Serve with pickles.

  • Serve with Turkish bread

Tips:

  • Use pre-cooked beans if you want a healthier option.
  • Add chilli for a spicier option.
  • Store leftover beans in an airtight container in the refrigerator for up to 5 days.
