When it comes to healthy salads, there are many recipes, many options and a huge variety of ingredients that you can use. Today, we bring you a recipe for a healthy rice noodle salad with bocconcini. Try it and enjoy.

Healthy Rice Noodle Salad with Bocconcini
Serves: 4
Preparation: 15 minutes
Ingredients:
- 200 g rice vermicelli noodles, soaked, drained
- 250 g cherry tomatoes, halved
- 6 green onions, thinly sliced
- 200 g bambini bocconcini, halved
- 3 cloves garlic, finely chopped
- 150 g almond slices, toasted
Dressing:
- 3 tbs extra virgin olive oil
- 1 tsp Himalayan salt
- 2 tbsp lemon juice
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
- 200 g prawn crackers, to serve
- ¼ cup parsley leaf, finely chopped, to serve
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Soak the noodles according to package directions, then drain and set aside.

Step 3
Meanwhile, in a large serving bowl, combine the noodles, tomato, bocconcini and green onion and mix well to combine.

Step 4
For the dressing, put olive oil in a small bowl, add salt, pepper, garlic, dry seasoning and lemon juice and mix well to combine.
Step 5
Spoon the dressing over the salad and mix well to combine. Sprinkle with toasted almonds and parsley leaves and put in the refrigerator for 15 minutes to cool.
Serving Suggestions:
- Serve with prawn crackers
- Serve with rice crackers
- Serve with sesame breadsticks
Tips:
- Replace the parsley with mint leaves
- Make a dressing from the ingredients of your choice
- Replace the almond slices with chopped peanuts
