Healthy Chickpea And Chilli Pasta

Ingredients:

  • 500 g spaghetti
  • 400 g can chickpeas, rinsed, drained
  • 200 cherry tomatoes, halved
  • 200 g bambini bocconcini, halved
  • 100 g spinach, chopped
  • 1 onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 long red chilli, finely chopped
  • 2 tbs extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper, freshly ground
  • 4 tbs fresh parsley leaves, finely chopped, to serve
  • 4 tbs parmesan, ground, to serve

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Cook pasta in a large pot of boiling water according to the packet directions or until al dente. Drain, reserving 1 cup cooking liquid.

Meanwhile, heat the oil in a medium-sized frying pan over medium heat. Add the onion, chilli and garlic and cook, stirring for 3 minutes, or until soft and fragrant. Add the tomato, chickpeas and the reserved cooking liquid and bring to a boil. Simmer for 5 minutes or until the tomato softens. Add the pasta and toss to combine.

Remove from heat, add the bocconcini, spinach and spices and stir well to combine.

Divide pasta among serving bowls and sprinkle with parsley and parmesan to serve.
