Healthy Lentil Patties with Dill Dip
Serves: 6
Preparation: 15 minutes
Cooking: 30 minutes
Ingredients:
- 300 g dried red lentils
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 2 carrots, grated
- 1 green capsicum, chopped
- 1 large celery stick, chopped
- ½ cup parsley leaves, chopped
- 2 tbs tomato puree
- 2 tbs extra virgin olive oil
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp paprika, ground
- ½ tsp black pepper, ground
- 200 g Greek yoghurt, traditional style
- 1 tsp fresh dill, finely chopped
Directions:
Step 1
Rinse the lentils in a colander under running water. Transfer them to a bowl and cover with filtered water. Leave to soak for 2 hours, then rinse, drain and set aside.

Step 2
Meanwhile, soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 3
Preheat the oven to 200°C. Line a baking tray with baking paper.

Step 4
Add the vegetables to the lentils and stir well to combine. Add tomato puree and spices and mix well. Transfer the mixture to a food processor and pulse until the mixture is smooth.

Step 5
Take the mixture with a spoon and shape patties with wet hands. Arrange the patties in the baking tray, sprinkle them with oil and bake for 30 minutes, or until golden brown.

Step 6
Meanwhile, for the dill dip, combine the yoghurt with the dill and mix well.

Serving suggestions:
