Healthy Salmon and Broccoli Frittata

Healthy Salmon and Broccoli Frittata

Serves: 6

Preparation: 20 minutes

Cooking: 50 minutes

Ingredients:

  • 200 g smoked salmon slices, chopped
  • 10 free-range eggs
  • 200 g broccoli, cut into florets
  • 2 carrots, finely sliced
  • 300 g sweet potato, peeled, grated
  • 250 g cherry tomatoes, halved
  • 250 g ricotta cheese
  • ½ cup Parmesan cheese, grated
  • 150 g spinach
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • ½ cup parsley leaves, finely chopped
  • 2 tbs extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper, freshly ground

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 2 minutes, or until the onion is fragrant and translucent. Then, add the carrots, garlic and sweet potato and cook, stirring, for 5 minutes, or until the sweet potato is just tender. Add broccoli and seasoning and cook for another 2 minutes. Remove from heat and set aside.

Preheat the oven to 200°C.   

Step 4

Whisk together eggs, half the spinach and half the parsley in a large bowl. Add the sweet potato mixture and mix well to combine. Pour the mixture into a glass baking dish and spread evenly over the bottom. Put cheese and salmon on top. Sprinkle with Parmesan cheese.

Step 5

Bake for 40 minutes, or until golden brown. Leave aside for 15 minutes to cool slightly. Sprinkle with cherry tomato halves and the remaining spinach and parsley.
