Healthy Vegan Spinach Filo Scrolls
Serves: 5

Cooking: 35 minutes
Ingredients:
- 15 sheets of filo pastry
- 300 g tofu, drained, crumbled
- 500 g baby spinach
- 1 medium onion, finely chopped
- 2 tbsp panko breadcrumbs
- 6 tbsp extra virgin olive oil
- 3 garlic cloves, crushed
- 2 tbsp nutritional yeast
- 3 tbsp sesame seeds
- 10 g dill, finely chopped
- 3 tbsp extra virgin olive oil
- ½ tsp Himalayan salt
- ½ tsp dry homemade seasoning
- ½ tsp black pepper, freshly ground
Directions:
Step 1
Soak the vegetables in baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat oven to 200°C. Line a large baking tray with baking paper and set aside.

Step 3
Heat 2 tablespoons of oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, for 2-3 minutes or until the onion gets translucent and fragrant. Add the garlic and cook for another minute, then remove from the heat and transfer to a plate.

Step 4
Heat 1 tablespoon of the remaining oil in the pan and add 1 quarter of the spinach. Cook, stirring, for 2 minutes, or until the spinach is wilted. Transfer to a large bowl and set aside. Repeat, In 3 more batches, with the remaining spinach. Set aside to cool slightly. Squeeze out as much liquid from the spinach as possible. Discard the liquid.

Step 5
Combine the spinach, onion mixture, tofu, breadcrumbs, dill, nutritional yeast, and seasonings in a large bowl and mix well to combine.
Step 6
Place the pastry sheets on a clean work surface and cover them with a damp tea towel. Spray 1 sheet with olive oil spray. Place another sheet on top and spray with olive oil spray. Top with 1 more sheet and spray with olive oil. Spoon one-fifth of the spinach mixture along one long edge of the stack, leaving a 2 cm gap on each end. Roll up to enclose the filling and arrange, seam-side facing down, into a roll in the centre of the lined baking tray. Repeat with the remaining pastry sheets and spinach mixture to make 4 more rolls and arrange them in the corners of the baking tray. Spray the rolls with olive oil and sprinkle with sesame seeds.

Step 7
Bake the rolls in preheated oven for 35 minutes, or until golden brown. Remove from the oven and leave to cool for 10 minutes. Cut into slices and serve.
