Grilled Spiced Champignons with Turkish Bread
Serves: 6
Preparation: 30 minutes + 30 minutes marinating time
Cooking: 10 minutes
Ingredients:
6 slices of Turkish bread, warmed
Spiced Mushrooms:
- 500 g large champignons
- 100 ml Greek-style yoghurt
- 3 large garlic cloves, crushed
- 1 medium lime, juiced
- ½ tsp ground chilli
- ½ tsp ground black pepper
- ½ tsp paprika
- 1 tsp ground cumin
- ½ tsp turmeric
- 3 tbsp extra virgin olive oil
Tahini Mixture:
- ½ cup Greek-style yoghurt
- ½ cup tahini
- 1 large lime, juiced
- 1 Garlic clove, crushed
- 2 tbsp Olive oil
Marinade
- ½ cup Greek-style yoghurt
- 2 tbsp Olive oil
- 2 tbsp Lime juice
- 1 Garlic clove, crushed
- 1 tsp Cumin
- 1 tsp Paprika
- ½ tsp Black pepper
- 1 tsp Turmeric
- ½ tsp Chilli flakes
Salad
- ½ white cabbage, shredded
- 1 small onion, thinly sliced
- 1 tsp raw sugar
- 4 radishes, thinly sliced
- 1 large lime, juiced
- 2 garlic cloves, crushed
- 2 + 2 tbs extra virgin olive oil
- ½ tsp Himalayan salt
- ½ tsp homemade dry seasoning
- ½ tsp paprika
- ½ tsp black pepper
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Marinade: Combine yoghurt, oil, lime juice, garlic, cumin, paprika, black pepper, turmeric and chilli in a large bowl. Add the mushrooms and stir to combine. Set aside for 30 minutes to develop the flavour.

Step 3
Tahini mixture: Combine yoghurt, tahini, garlic, remaining lime juice, and 2 tablespoons oil in a small bowl. Season to taste and mix well to combine.

Step 4
Salad: Combine onion, radish, cabbage, pepper, paprika, garlic, dry seasoning, salt, sugar, 2 tablespoons oil, and half the lime juice in a medium bowl. Stir well and set aside to soak.

Step 5
Preheat the grill to maximum.
Step 6
Line a baking tray with foil. Place a greased wire rack over the lined tray. Arrange the mushrooms over the wire rack, spray them with olive oil and cook under the grill for 5 minutes on each side, or until they are golden and tender.

Step 7
Spread the tahini mixture over the slices of bread and arrange them on a serving plate. Serve with mushrooms and salad.
Serving suggestions:
- Can be served with baked tofu slices
- Serve with salad of your choice
- Serve with sour cream
Tips:
- Replace Turkish bread with pita bread
- Replace Greek-style yoghurt with yoghurt of your choice
- Add halved cherry tomatoes for decoration
- Store leftover salad and tahini mixture in airtight containers in the refrigerator for up to 3 days
