Baked Potatoes with Beans
Serves: 4
Preparation: 10 minutes
Cooking: 50 minutes
Ingredients:
- 4 large potatoes
- 1 large onion, chopped
- 3 cloves garlic, finely chopped
- 420g can of baked beans in tomato sauce
- 150 g frozen carrot, corn and pea mix
- ½ cup cheddar cheese, grated
- 1 cup rocket leaves
- 3 + 3 tbs extra virgin olive oil
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat the oven to 200°C. Line a medium-sized baking tray with baking paper.

Step 3
Cut a cross into the top half of each potato. Place potatoes in a baking tray and drizzle with olive oil and salt. Bake for 45 minutes, or until the potatoes are cooked through and crispy. Set aside to cool slightly. Leave the oven on.
Step 4
Meanwhile, heat the remaining oil in a medium frying pan over medium heat. Add the onion and cook, stirring, for 3 minutes or until translucent. Add the garlic and vegetable mix and cook, stirring, for 1 minute or until starting to soften. Then, add the seasoning and cook, stirring, for another minute or until fragrant. Add the baked beans and bring to a boil.

Step 5
Carefully squeeze potatoes to open them up slightly. Divide the bean mixture evenly over the potatoes. Sprinkle with the cheese and bake for 5 minutes or until the cheese is melted.
Step 6
Arrange the potatoes among serving plates, top with rocket leaves, and serve.
