Healthy Beetroot Salad with Feta Cheese

Salads are a simple and healthy option for a light meal. They are ideal to serve with a main course or as an easy lunch option. There are many ingredients to use and many different dressings that will make it more delicious. Today, we bring you a recipe for a Healthy Beetroot Salad with Feta Cheese to try and enjoy.

Healthy Beetroot Salad with Feta Cheese

Serves: 6

Preparation: 15 minutes

Cooking: 30 minutes

Ingredients:

  • 3 large beetroots with stems and leaves
  • 200 g red lentils
  • 3 cloves garlic, chopped
  • 1 cup rocket leaves
  • 150 g feta cheese, crumbled
  • ½ cup walnuts, toasted, roughly chopped
  • 1 lemon, juiced
  • 50 ml extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry spices
  • ½ tsp black pepper, cracked

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Roughly chop the beetroot stems and leaves and set aside.

Step 3

Peel the beetroots and cut into wedges. Place the beetroot wedges in a steamer and steam for 15 minutes, or until the beetroots are tender. Remove from heat and let cool.

Step 4

Meanwhile, place the lentils into a saucepan of filtered water. Add the salt and dry spices and bring to a boil over medium heat. Cook for 30 minutes or until lentils are tender. Remove from heat, drain, and set aside to cool.

Step 5

Combine the olive oil and lemon juice in a small bowl and toss to combine.

Step 6

Place the beetroot wedges, stems, leaves, and lentils into a large bowl. Add the oil mixture and mix well to combine. Transfer to a serving bowl and top with the rocket, feta and walnuts. Sprinkle with cracked black pepper.
