For seafood lovers, mussels are usually at the top of the list of favourites. They are healthy and delicious, easy to prepare, and can be served as a main or a side dish. Today, we bring you a recipe for a healthy chilli mussel soup with garlic bread that you can try and enjoy.

Healthy Chilli Mussel Soup with Garlic Bread
Serves: 6
Preparation: 10 minutes
Cooking: 30 minutes
Ingredients:
- 700 g frozen mussel meat
- 1 X 450 g garlic baguette (twin pack)
- 2 tbs extra virgin olive oil
- 30 g unsalted butter
- 1 leek, pale section only, thinly sliced
- 1 medium onion
- 3 cloves garlic, finely chopped
- 150 ml cooking cream
- 200 ml filtered water
- 50 g dill springs, finely chopped
- ½ tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp chilli flakes
Directions:
Step 1
Preheat oven to 200°C. Place the garlic bread on a baking tray and bake according to the instructions on the package. Cut the garlic bread into 5 cm slices and return to the tray. Turn off the heat and return the garlic bread to the oven, keeping the oven door slightly open.

Step 2
Heat the butter in a large saucepan over medium heat. Add the olive oil, leek, garlic, and onion and cook, stirring, for 5 minutes, or until softened. Add water and bring to a boil. Then, add the mussels and cook for 5 minutes. Add the cream to the mixture and let it boil. Add the spices and mix well to combine.


Step 3
Divide the soup into serving bowls, top with dill and serve with garlic bread.

Serving suggestions:
- Serve with polenta instead of garlic bread.
- Serve with Turkish bread instead of garlic bread.
Tips:
- Replace frozen mussel meat with fresh mussels. Cook them until the shells open.
- Discard all the unopened mussels before cooking.
- Store leftover mussel soup in an airtight container in the refrigerator for up to 2 days.
